- The bottom and center of the cake are layered with chocolate sponge with black cherries, filled with a layer of 66% cocoa Belgian chocolate mousse, and the top is layered with vanilla mousse blended with lots of finely chopped maraschino red cherries for an enhanced biting texture. We use vanilla mousse and chocolate mousse to replace the tradition-heavy whipped cream to make this cake lighter, richer in taste and texture, and it’s an invention that we are proud of.
